Navajo Avocado Rice

Ingredients
- 1 tablespoon butter or 1 tablespoon margarine
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 cup regular uncooked rice
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano, ground
- 1/4 teaspoon cumin
- 1/4 teaspoon turmeric
- 1 (14 1/2 ounce) can chicken broth
- 1 avocado
Directions
- 1 Place butter and oil in 2-quart pan over medium heat.
- 2 When butter is melted, add onion and garlic; cook until onion is tender.
- 3 Add rice; cook, stirring constantly, 3 minutes or until rice looks milky and opaque.
- 4 Add salt, oregano, cumin, turmeric and broth.
- 5 Bring to a boil.
- 6 Cover, reduce heat and simmer 20 to 25 minutes or until rice is tender and all liquid is absorbed.
- 7 Peel and pit avocado; dice.
- 8 Fluff up rice with fork; add avocado and toss gently.
- 9 Turn off heat; let stand 5 minutes before serving.
