Chicken With Orzo and Veggies

Ingredients
- 3 tablespoons olive oil
- 1 large red onion, finely chopped
- 4 garlic cloves, smashed
- 1 sweet red pepper, diced
- 1 (14 ounce) can chicken broth
- 2 cups broccoli florets, cut into bite-size pieces
- 3/4 cup orzo pasta, uncooked
- 1 lb boneless skinless chicken breast, cut into 1 inch pieces
- 1 1/2 cups corn (fresh or frozen)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper, fresh ground
- 3/4 cup parmesan cheese, shredded
Directions
- 1 Heat oil in a large frypan over medium high heat. Add onion, garlic and red pepper. Cook 2 minutes. Add broth, broccoli and orzo.
- 2 Reduce heat to medium, cover and cook for 6 minutes, stirring occasionally.
- 3 Add chicken and corn, cook an additional 8 minutes or until chicken juices run clear.
- 4 Remove from heat, season with salt and pepper and gently stir in cheese.
- 5 Serve immediately.
