Port Roasted Tomatoes

Time: 1 hrs 5 mins

Ingredients

  • 6 roma tomatoes (Italian)
  • 200 ml port wine
  • 4 tablespoons brown sugar

Directions

  • 1 Heat your oven to 150c.
  • 2 Cut the tomatoes in half lengthways, place them in a baking dish, cut side up.
  • 3 Pour the port over the tomatoes, sprinkle 1 teaspoon brown sugar over each half, then bake until tomatoes are caramelized and port is syrupy-about 1 hour.
