Hidden Chocolate Mint Cookies

Ingredients
- 1/4 cup shortening
- 1/4 cup butter or 1/4 cup margarine
- 1/2 cup granulated sugar
- 1/4 cup brown sugar (packed)
- 1 egg
- 1 tablespoon water
- 1/2 teaspoon vanilla
- 1 1/2 cups flour
- 2 tablespoons flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 dozen chocolate-covered mint candies (I use Andes creme de menthe thins)
Directions
- 1 Mix the shortening, sugars and egg.
- 2 Stir in water and vanilla.
- 3 Stir together the dry ingredients then mix into the batter.
- 4 Chill the dough.
- 5 Enclose each wafer into about 1 tablespoon of dough.
- 6 Place each on a greased baking sheet and bake in a 400 degree oven for 8-10 minutes, or until no imprint remains when touched lightly.
