Hidden Chocolate Mint Cookies

Ingredients

  • 1/4 cup shortening
  • 1/4 cup butter or 1/4 cup margarine
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar (packed)
  • 1 egg
  • 1 tablespoon water
  • 1/2 teaspoon vanilla
  • 1 1/2 cups flour
  • 2 tablespoons flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 dozen chocolate-covered mint candies (I use Andes creme de menthe thins)

Directions

  • 1 Mix the shortening, sugars and egg.
  • 2 Stir in water and vanilla.
  • 3 Stir together the dry ingredients then mix into the batter.
  • 4 Chill the dough.
  • 5 Enclose each wafer into about 1 tablespoon of dough.
  • 6 Place each on a greased baking sheet and bake in a 400 degree oven for 8-10 minutes, or until no imprint remains when touched lightly.
