Apple Nut Loaf

Ingredients

  • 1/2 cup shredded carrot
  • 1 1/3 cups applesauce
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 eggs
  • 3/4 cup granulated sugar
  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/3 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup walnut pieces, coarsely chopped

Directions

  • 1 Preheat oven to 350 degrees.
  • 2 Combine carrots, applesauce, oil and vanilla.
  • 3 Add eggs and sugar and mix together.
  • 4 In another bowl, mix the rest of the dry ingredients.
  • 5 Stir dry ingredients into applesauce mixture until blended. Do not over mix.
  • 6 Divide mixture into 2 loaf pans.
  • 7 Bake for 55 minutes or until toothpick inserted in center comes out clean.
  • 8 Remove from the oven and allow to cool before removing from bake ware.
