Bacon-Cheddar Muffins

Time: 30 mins

Ingredients

  • 5 slices bacon
  • 1 1/2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 large egg, beaten
  • 1 cup milk
  • 3 tablespoons unsalted butter, melted

Directions

  • 1 Preheat oven to 400 degrees.
  • 2 Line a dozen muffin cups with paper liners and set aside.
  • 3 Cook bacon in large skillet or microwave until crisp.
  • 4 Transfer to paper towels to drain; reserve 2 tablespoons bacon fat from pan.
  • 5 Whisk together flour, cornmeal, baking powder, salt, and pepper in a large bowl. Then stir cheese into mixture.
  • 6 In a small bowl, beat together egg and milk; stir into dry mixture.
  • 7 Crumble bacon.
  • 8 Add bacon, reserved bacon drippings and melted butter to batter.
  • 9 Fold until blended.
  • 10 Spoon batter into prepared muffin pan.
  • 11 Bake about 20 minutes.
  • 12 Let cool for 10 minutes before serving.
