Bacon-Cheddar Muffins

Ingredients
- 5 slices bacon
- 1 1/2 cups all-purpose flour
- 1/2 cup cornmeal
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sharp cheddar cheese, shredded
- 1 large egg, beaten
- 1 cup milk
- 3 tablespoons unsalted butter, melted
Directions
- 1 Preheat oven to 400 degrees.
- 2 Line a dozen muffin cups with paper liners and set aside.
- 3 Cook bacon in large skillet or microwave until crisp.
- 4 Transfer to paper towels to drain; reserve 2 tablespoons bacon fat from pan.
- 5 Whisk together flour, cornmeal, baking powder, salt, and pepper in a large bowl. Then stir cheese into mixture.
- 6 In a small bowl, beat together egg and milk; stir into dry mixture.
- 7 Crumble bacon.
- 8 Add bacon, reserved bacon drippings and melted butter to batter.
- 9 Fold until blended.
- 10 Spoon batter into prepared muffin pan.
- 11 Bake about 20 minutes.
- 12 Let cool for 10 minutes before serving.
