Easy Onion Relish

Time: 40 mins

Ingredients

  • 2 lbs large sweet onions, chopped
  • 2 celery ribs, chopped finely
  • 1 medium red bell pepper, chopped
  • 1 -2 tablespoon melted butter
  • 3/4 cup apple cider vinegar
  • 1/4 cup water
  • 2 tablespoons brown sugar (or to taste)
  • 1 teaspoon celery seed
  • 1/4 teaspoon salt (or to taste)

Directions

  • 1 Saute onions, celery and red bell pepper in the butter in a Dutch oven for about 15 minutes or until tender (do not brown).
  • 2 Add in vinegar and remaining ingredients to the mixture; bring to a boil, reduce heat and simmer uncovered for about 20 minutes.
  • 3 Store in refrigerator for 1 day before using.
  • 4 Serve chilled or at room temperature.
