Frank and Potato Bake
Time: 50 mins
Ingredients
- 4 medium potatoes, cooked, peeled and sliced
- 4 -5 frankfurters, sliced
- 1/4 onion, finely chopped
- 1 tablespoon butter
- 1 tablespoon flour
- 1/2 teaspoon salt
- 2/3 cup milk
- 3/4 cup cheddar cheese, shredded
- 1 tablespoon parsley
- 2 teaspoons prepared mustard
Directions
- 1 In saucepan cook onion in butter till tender but not brown.
- 2 Blend in flour and salt. Add milk all at once; cook and stir over medium heat till thickened and bubbly.
- 3 Add cheese, stirring to melt.
- 4 Stir in parsley and mustard.
- 5 Fold in potatoes and Frankfurters.
- 6 Place in a 1 quart casserole.
- 7 Cover and bake at 350 degrees for about 35 minutes or till heated through.
- 8 Prep time does not include cooking and cooling of the potatoes.
