Frank and Potato Bake

Time: 50 mins

Ingredients

  • 4 medium potatoes, cooked, peeled and sliced
  • 4 -5 frankfurters, sliced
  • 1/4 onion, finely chopped
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 3/4 cup cheddar cheese, shredded
  • 1 tablespoon parsley
  • 2 teaspoons prepared mustard

Directions

  • 1 In saucepan cook onion in butter till tender but not brown.
  • 2 Blend in flour and salt. Add milk all at once; cook and stir over medium heat till thickened and bubbly.
  • 3 Add cheese, stirring to melt.
  • 4 Stir in parsley and mustard.
  • 5 Fold in potatoes and Frankfurters.
  • 6 Place in a 1 quart casserole.
  • 7 Cover and bake at 350 degrees for about 35 minutes or till heated through.
  • 8 Prep time does not include cooking and cooling of the potatoes.
