Golden Potato Soup

Ingredients

  • 1 tablespoon butter
  • 1/4 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1 medium carrot, shredded
  • 1 large potato, diced
  • 3/4 cup water
  • 1 cup milk
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 1 tablespoon flour
  • 1 tablespoon cornstarch
  • 3 tablespoons water
  • 3/4 cup sharp cheddar cheese, grated
  • paprika (to garnish)

Directions

  • 1 Saute onion and celery in butter in a medium saucepan.
  • 2 Add carrot, potato and 3/4 cup water; bring to a boil.
  • 3 Cover, reduce heat and simmer until potato is tender (about 15 minutes)
  • 4 Stir in milk, salt and pepper. Bring to a gentle boil, stirring often.
  • 5 In a small bowl, combine flour, cornstarch and 3 tablespoons water; stir into soup mixture.
  • 6 Cook and stir until thickened.
  • 7 Remove from heat.
  • 8 Stir in cheese until melted.
  • 9 Sprinkle each serving with a pinch of paprika.
