Pineapple and Macadamia Shortbread

Time: 1 hrs 20 mins

Ingredients

  • 2 1/2 cups flour
  • 1/3 cup packed brown sugar
  • 1 cup cold butter
  • 1/4 cup finely chopped macadamia nuts
  • 1/4 cup chopped candied pineapple

Directions

  • 1 preheat oven to 325.
  • 2 combine flour and sugar.
  • 3 cut in butter until mixture resembles fine crumbs and starts to cling.
  • 4 stir in nuts and pineapple.
  • 5 form into ball, knead until smooth.
  • 6 on a lightly floured surface roll dough 1/4 inch thick.
  • 7 using a 2 inch cookie cutter cut into shapes.
  • 8 reroll scrapes only twice.
  • 9 place 1 inch apart on ungreased cookie sheet.
  • 10 bake 15-20 minutes.
  • 11 transfer to wire rack.
