Roasted Cauliflower and Mushrooms

Ingredients

  • 1 head cauliflower, broken into flowerets
  • 8 ounces mushrooms, quartered
  • 1/2 cup chopped onion
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 3 teaspoons lemon juice
  • 3 teaspoons cider vinegar
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon curry powder
  • 1 teaspoon parsley

Directions

  • 1 Preeat oven to 350.
  • 2 Spray a casserole dish with cooking spray.
  • 3 Place cauliflower and mushrooms in a large bowl; add all remaining ingredients and toss together well.
  • 4 Pour into prepared casserole dish.
  • 5 Bake, uncovered, 40-45 minutes (stir occasionally) or until vegetables are tender and golden.
