Roasted Garlic and Rosemary Potatoes

Ingredients
- 1/8 cup olive oil
- 1/4 cup fresh rosemary, chopped
- 4 garlic cloves, finely minced
- salt and pepper
- 5 potatoes, large, scrubbed and cut in 1/2 inch thick slices
Directions
- 1 Preheat oven to 400 degrees F.
- 2 Combine oil, rosemary, garlic, salt and pepper in large bowl.
- 3 Add potato slices and turn them until throughly coated with the dressing.
- 4 Arrange in baking dish, slightly overlapping each slice.
- 5 Place in the oven and bake for 60 minutes until golden crisp.
