Baked Potato Salad

Ingredients
- 6 idaho potatoes (baked)
- 2/3 cup mayonnaise
- 2/3 cup sour cream
- 6 slices bacon (cooked crisp and crumbled)
- 1/2 cup grated cheddar cheese
- 1 tablespoon fresh chives (cut)
- salt and pepper
Directions
- 1 Bake the potatoes; cool slightly; peel.
- 2 Dice into a bowl.
- 3 Mix the mayonnaise and sour cream together; set aside.
- 4 Fry the bacon and crumble.
- 5 Add the bacon, cheese, chives, salt, and pepper to the potato.
- 6 Mix in the mayonnaise mixture to the potato mixture.
- 7 Toss gently.
- 8 Refrigerate and serve cold.
