Baked Potato Salad

Time: 30 mins

Ingredients

  • 6 idaho potatoes (baked)
  • 2/3 cup mayonnaise
  • 2/3 cup sour cream
  • 6 slices bacon (cooked crisp and crumbled)
  • 1/2 cup grated cheddar cheese
  • 1 tablespoon fresh chives (cut)
  • salt and pepper

Directions

  • 1 Bake the potatoes; cool slightly; peel.
  • 2 Dice into a bowl.
  • 3 Mix the mayonnaise and sour cream together; set aside.
  • 4 Fry the bacon and crumble.
  • 5 Add the bacon, cheese, chives, salt, and pepper to the potato.
  • 6 Mix in the mayonnaise mixture to the potato mixture.
  • 7 Toss gently.
  • 8 Refrigerate and serve cold.
