Basic Beef Stew

Ingredients
- 2 lbs chuck roast
- 3 cups beef broth
- 1 onion, cubed
- 3 garlic cloves, smashed
- 6 potatoes, peeled and cubed
- 1 cup baby carrots
- 1/4 cup cornstarch
Directions
- 1 In a crockpot, place roast (whole) add onion, garlic and beef broth. Salt and pepper if desired.
- 2 Cook on lo for 6-8 hours (I plug it in before I go to work).
- 3 Remove beef, cube and return to crock pot. Add potatoes and carrots, cook for 45 minutes.
- 4 Combine cornstarch with a little water, add and cook 15 more minutes until thickened.
- 5 I serve with crusty bread and a salad.
