Black Bean and Rice Salad

Time: 3 hrs 20 mins

Ingredients

  • 1 cup rice, uncooked
  • 1 (15 ounce) can black beans, drained, rinsed
  • 1 medium red pepper, cut into thin strips
  • 1/2 cup ranch dressing
  • 2 green onions, thinly sliced
  • 1/4 cup chopped cilantro
  • 1 teaspoon ground cumin

Directions

  • 1 COOK rice as directed on pkg.; place in large bowl. Cool slightly.
  • 2 ADD remaining ingredients; mix lightly. Cover.
  • 3 REFRIGERATE several hours or until chilled.
  • 4 * Cook time includes chilling.
