Vegetable Smoothie

Time: 40 mins

Ingredients

  • 2 cups tomato juice
  • 1/2 cup chopped red bell pepper
  • 1/2 cup peeled and chopped cucumber
  • 3 tablespoons lemon juice
  • 2 tablespoons chopped scallions
  • 2 teaspoons Worcestershire sauce
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon fresh ground pepper
  • 1/4 teaspoon hot pepper sauce

Directions

  • 1 Combine all ingredients in a blender and process until smooth, about 3 minutes.
  • 2 Chill for at least 30 minutes.
  • 3 Fill 4 glasses with ice and divide the smoothie mixture evenly among them.
  • 4 Serve immediately. Enjoy!
